Pumpkin Olive Oil Bundt Cake

Ingredients:

1/2 cup MOOC blood orange olive oil

1/2 cup mild extra virgin olive oil (I used Manzanillo)

1 1/2 cups sugar

3 eggs

3 cups flour

2 tsp baking soda

1/2 tsp salt

1 tsp nutmeg

1 tsp cinnamon

1/4 tsp ground cloves

1 can (15 oz) solid pack pumpkin OR 2 cups roasted sugar (pie) pumpkin

Instructions

Pre-heat oven 350 degrees

combine sugar and oil in a large bowl with a rubber spatula until just blended

Add eggs, one at a time, beating well between each addition

In separate bowl, sift together flour, baking soda, cinnamon, cloves, nutmeg, and salt.

Slowly combine wet and dry ingredients

Add pumpkin, beat well

Transfer mixture to bundt pan.

Bake 60 min or until inserted toothpick comes out clean

Cool 15 mins on a wire rack

Dust with powdered sugar and enjoy.
