Olive Oil Lemon Pound Cake

Bring this cake to your next holiday gathering - your friends won't believe this is made with olive oil! This is a more "old fashioned" pound cake recipe, and uses few ingredients. 

Ingredients:

1 1/4 cups flour

3 large eggs

3/4 cup sugar

3/4 cup olive oil (half of this mild EVOO and half Meyer Lemon olive oil)

1 tsp vanilla extract

1/2 tsp sea salt

1 tsp baking powder

Directions:

Preheat oven 350, and grease a cake pan (I used 9 in round pan)

Mix dry ingredients

Beat eggs into mixture

Slowly add olive oil and mix until blended. I did this by hand to avoid over-mixing.

Mix in vanilla

Bake for 45 mins until top is golden brown and inserted toothpick comes out clean.

Allow to cool and enjoy.  Add a light drizzle of strawberry balsamic for an extra treat!
