Roasted Fingerling Potatoes
1 lb. Fingerling Potatoes 1 clove garlic, grated or minced
2 TBSP MOOC Extra Virgin Olive Oil MOOC Garlic Medley or Truffle Sea Salt
1/2 TSP MOOC White Truffle Oil Fresh ground pepper
Heat oven to 425. Wash/scrub potatoes, cut in half or quarters.
Toss potatoes with Extra Virgin Olive Oil and sprinkle with sea salt and pepper to taste.
Place potatoes cut side down on baking sheet and place in oven.
Turn potatoes over after 15 minutes and return to oven.
Remove potatoes from oven when they are tender and cut sides are golden and crispy, after approx. 30-35 minutes of cooking time.
Toss with garlic and White Truffle Oil.
Serve immediately.
